Five friends turned business partners — Greg Cooney, Don Bouvier, Anthony Bolner, Dave Swiney, and Steve Gumbert — have lived in Richardson for more than 25 years. The restaurant was not conceived as an outside concept dropped into a neighborhood. It was built by longtime residents who wanted to invest in the community they call home. Their shared goal was to bring a Dallas-caliber culinary and cocktail experience into a true neighborhood setting, creating something elevated while remaining welcoming and accessible.

The name carries meaning that reflects that collaboration. The Fifth represents the fifth concept to occupy the space, the five partners behind it, and a subtle nod to the phrase “pleading the fifth,” hinting at the personality and confidence behind the brand. From the beginning, ownership has been collective and hands-on, with each partner contributing to both the vision and daily execution.

Design and menu development unfolded together. The fireside patio, open floor plan, and warm finishes were intentionally created to mirror the food and beverage program. The space feels polished yet approachable, energetic without being overwhelming. The patio has become a signature feature, drawing guests who want to linger over dinner or gather around the fire with cocktails in hand.

In the kitchen, the focus remains on quality, range, and execution. The menu offers elevated comfort food prepared with precision, designed to appeal broadly while maintaining high standards. Dishes such as Chicken Fried Chicken, Grilled Redfish, Chicken Tikka Skewers, and Rosewood Wagyu Short Rib reflect that philosophy. The bar program is equally intentional, with handcrafted cocktails built to complement the menu and showcase balance and detail.

Behind the scenes, the restaurant operates as a true scratch kitchen. Steaks are butchered in house. Fish is filleted on site. Quality control is monitored closely. Perhaps most notably, the ownership team is deeply involved in day-to-day operations, working alongside staff and maintaining a visible presence.

What began as an investment in Richardson had clearly become something reciprocal. The restaurant was no longer just a concept. It had earned its place as a neighborhood staple.

   

As the city continues to evolve, the partners remain committed to refining operations, elevating service, and thoughtfully enhancing the menu while staying grounded in their original mission. Growth is measured not only by performance, but by consistency and relationships.

For a group of longtime residents, that local foundation matters. The Fifth is not simply located here. It was built by neighbors for neighbors. In that sense, it has become exactly what this series celebrates: a true Richardson Original.
